slow-cooked beer brisket sandwiches

1 tablespoon olive oil
1 (2 lb.) boneless beef brisket
ground black pepper, to taste
1 medium onion, sliced
1 (12 oz.) bottle dark beer
1 cup chili sauce
8–10 sandwich buns, split
in a large skillet, heat oil over medium-high heat.
season brisket with pepper to taste; place in skillet.
cook 2–3 minutes per side or until browned.
transfer brisket to a slow cooker.
return skillet to medium-high heat.
add onion; cook and stir 5 minutes or until softened.
place onion in slow cooker.
in a small bowl, whisk together beer and chili sauce until well combined.
add to slow cooker.
cover and cook on low 6 to 8 hours or until brisket is fork-tender.
transfer brisket and onion to a platter, reserving cooking liquid in slow cooker.
slice brisket against the grain into thin slices and place in sandwich buns.
top with onion, spoon with cooking liquid and serve.
